I’m really trying to make the most out of the summer fruits before they disappear until next summer! I can’t get enough of them and really miss them during the winter months. As our main food belief is based on chemical free, organic food, we only eat what’s in season. If you eat strawberries in February, the likelihood is they’ve come from a country far away and have had to be packed full of preservatives to keep them fresh until they arrive in the UK so as I said, trying to get my fix while I can.

My iron levels have dropped as I approach the end of my pregnancy so I have increased my intake of Baobab to help increase my iron and boost my immune system. This smoothie is seriously delicious…

Ingredients

200ml almond milk
2 ice cubes
6 strawberries
Large handful blueberries
Quarter pineapple
1 tsp baobab
1 tsp ground flax seeds

Method

Simply put all the ingredients in the blender and blend until smooth.

Immune Boosting Berry & Superfood Smoothie

Immune Boosting Smoothie

I’ve been feeling a little under the weather the last few days and the last thing I want to do is to take some nasty, over-the-counter chemical meds that will suppress the toxins. My aim is to release the toxins and let my body heal the natural way. And there are plenty of ways to do this.

I added maca – for extra strength, acai berries – hugely powerful anti-oxidants (both from Organic Burst), chia seeds – a great source of plant-based protein and added to that blueberries – more anti-oxidants (organic of course, otherwise it kind of negates their powers), strawberries and banana, because I need lots of plant-based natural sugars to keep strong.

Ingredients

250ml almond milk
1 banana (frozen or fresh, depends how creamy you like it)
5 strawberries
Handful blueberries
1 tsp maca powder
2 acai berry capsules, opened and sprinkled in
1 tsp chia seeds
4 ice cubes
2 figs, cut up in small pieces (optional)

Method

Simply put all the ingredients into your  blender (except for the figs) and blend. Pour into a cup and add the figs which are yummy to eat in chunks as you’re drinking the smoothie.

Creamy Cashew Yoghurt

Cashew Yoghurt

I love yoghurt and I think it’s one of the things I found I missed most when cutting out dairy. But don’t fret! We can make our own dairy-free version of course! And I used cashews here. Mainly because cashews go really nice and creamy and are also quite sweet so they make a great yoghurt. The magnesium content in cashews also helps keep our bones strong and are packed with flavanols which starve tumours and stop cancer cells from spreading, which is essential in this day and age with all the cancers around.

I added 2 probiotic capsules to this also, firstly to help keep my gut strong (read about that here) but also to help build yoghurt cultures in the yoghurt, so it’s not just a cashew cream.

In order for nuts to survive, nuts contain inherent toxic inhibitors that protect the plant from germination until the ideal conditions are present (nature is amazing!) It is not until they get wet and there is sufficient moisture that they germinate. It can wreak havoc on your digestive system if you don’t soak them because these protective enzyme inhibitors do not digest in our bodies, your body will fight them, so you must soak them to release these toxins. Not soaking nuts first will also inhibit the absorption of nutrients. I suggest soaking overnight but 4 hours will do it.

You can top this with anything you like, I used strawberries, sunflower seeds and hazelnuts.

Ingredients

1 cup cashews
1 and quarter cup purified water
2 dates
2 tsp organic natural maple
1 tsp vanilla essence
2 probiotic capsules

Method

First, you must soak your cashews in purified water for AT LEAST 4 hours. Soak overnight if you can. Do not omit this step. (See above for explanation). Once the nuts are ready, drain and rinse, then put them in the blender with the water and blend for around 7-10 minutes. You need it to go super smooth and creamy. If you have a high-speed blender like a Vitamix, the mixture will heat up like a soup, don’t worry.

After around 4 minutes of blending, add the rest of the ingredients and proceed to blend until completely smooth like a yoghurt. Add more water if it’s too thick.

Store in a sealed container in the fridge (once it has cooled) for up to four days and enjoy with your favourite toppings.

Blood Orange & Jaffa Orange Juice

These winter days (in London, not in South Africa where Raine is sunning herself!) need lots of vitamin C and anti-oxidants, so some days I may make a fruit juice instead of a green vegetable juice. Today I really craved oranges and the lovely people at Abel & Cole sent me a box full of them!

Ingredients

3 Jaffa oranges
3 blood oranges

Peel the oranges, leaving the pith on, and juice! Simples!

Acai Berry Smoothie Bowl

Oh hello breakfast! I don’t know about you guys, but breakfast is by far my favourite meal of the day. I’ve never been the person who can go out the house without breakfast and wait until lunch. Since I started eating plant-based, unprocessed, wholefoods, breakfast has become a lot more fun! Because nothing I cook has any refined sugar, I can actually have dessert for breakfast! (Parfaits, nana ice cream etc).

I’m mad about the acai berry so today I decided to make a totally scrumptious acai bowl. Acai berries have been tested to hold more polyphenols and antioxidants than pretty much any other food. You get polyphenols from other berries, especially blueberries, but acai berries have them in an abundance never seen before. They are indigenous to the Amazon in Brazil and have only recently become public knowledge – great for us! Polyphenols make us happy and also help us prevent and beat degenerative diseases such as cancer and autoimmune diseases. Polyphenols also make your skin look and feel incredible so including them in your diet as well as using them as a beauty product will help not only your inner health, but your outer health too! (I will post a recipe for a face mask using acai capsules soon). Acai berries are also rich in fatty acids omegas 3, 6 & 9 which is all you need for that anti-inflammatory boost and also makes it great for babies as they need their omegas in high amounts. Your babies will just love the sweet, creaminess of this – mine did!

I wanted to make this bowl really thick and creamy. It’s almost like a smoothie in a bowl but creamier, so a bit like dessert! I hope you love it as much as I do…

Ingredients

½ cup raspberries
½ cup blueberries
1 cup strawberries
2 dates
1 tbsp almond butter (you can use any nut butter)
2 tbsp almond milk
4 Organic Burst acai capsules, opened and sprinkled in
1 probiotic capsule (optional) (opened and sprinkled in)
1 frozen banana (chopped and frozen the night before)

Method

Simply put all the ingredients into your food processor or blender, in the exact order as they appear, and start blender on a low speed and increase gradually. Once creamy pour into a bowl and top with anything you like such as nuts, seeds, goji berries, fruit, granola – the world is your acai bowl!
