Mixed Roast Beets

Excuse the quality of this picture. I made these at night so it was quite dark but they still look delicious – and they tasted delicious! This is such a simple side dish to make and so nutritious.

Beetroot are great antioxidants and help detox the liver and the blood, they are also high in many vitamins, including folate, so a great vegetable to eat when pregnant.

Ingredients

2 red beets
2 golden beets
2 chioggia beets
Drizzle of olive oil
Handful of thyme
Salt & pepper

Method

Preheat your oven to 180 degrees and prepare an oven tray with baking paper or silver foil.

Peel your beets and slice them thinly. Put them all in a bowl and add the rest of the ingredients and mix until covered.

Place on the baking tray and roast for around half an hour.

Winter Detox Smoothie

Avocado smoothie

It’s all about the detox this winter and although I usually juice my green veg as I prefer the texture, I also like to make the odd smoothie in the vitamix or nutribullet so that I can get the superfoods in like spirulina, and add an avocado which I don’t do when juicing. This one is great to get the metabolism going and boost the immune system on these cold winter days.

Ingredients

Half an avocado
Handful of kale
1 banana
100ml coconut water
1 tsp spirulina
1 probiotic capsule
1 tsb Manuka honey
2 ice cubes

Method

Add all the ingredients to your blender (I used a Vitamix) and open the probiotic capsule and pour it in. Blend, pour and enjoy!

Peppermint Matcha Latte

I wanted to start a gentle detoxification of the fertility drugs I had to take, so I decided to start drinking matcha tea. I bought the ceremonial grade (this is the highest grade and should be the one you use if it’s for drinking) and started having one cup a day (can’t have more as I’m breastfeeding). One afternoon I fancied something sweet. I used to love a chai tea latte at Starbucks but I try not to drink any of that anymore, so I wondered if I could make matcha into a latte. Turns out you can, and it’s delicious! You can add the peppermint like I did or have it without.

Ingredients

1 tsp ceremonial grade matcha tea
1 mug full of almond milk
1 tsp agave nectar
1 drop organic peppermint oil

Method

Heat the almond milk in a saucepan over a medium heat. Once it’s hot, add the matcha, stir quite well to get the milk to absorb the powder, then add the agave and peppermint oil and stir until well incorporated.

Pour into a mug and enjoy as a warming, satisfying afternoon drink.

Pretty in Pink Valentine’s Juice

I felt like something pink and sweet on this Valentine’s morning so I made this beautiful juice!

Originally from Persia, the pomegranate has been revered as a symbol of health, fertility and eternal life for thousands of years. I’m always amazed at how nature gives us clues as to which fruit or vegetable is good for a certain part of our bodies. There is something heart-like about a pomegranate when you open it, with its blood-red seeds and white membranes. Pomegranate contains a unique compound called punicalagin, which is excellent for heart health. It lowers cholesterol and blood pressure, and increases the rate at which arterial blockages melt away. The antioxidants in pomegranate also help to prevent stroke and heart attack.

Radishes eliminate toxins, aid digestion and prevent viral infections.

Ingredients (serves 2)

1 pomegranate, skin and membranes discarded (you don’t have to spend half an hour picking out every little piece of membrane – just the majority of it!)
3 radishes
1 lime (you can juice the skin)
1 medium cucumber
a few sprigs of mint
1 red pepper

Method

Put everything through your juicer. Add ice if you like.
