Breakfast Parfait 1

Did somebody say breakfast parfait?? I haven’t done one of these for a while but I fancied pre-preparing some overnight oats and a chia pudding last night so threw together a parfait this morning with quinoa pops, almond butter and a top layer of blueberry banana acai ice cream and topped with the wonderfully vitamin K-rich mulberries.

Ingredients

Overnight oats layer:
Half a cup of gluten free organic rolled oats
1 1/2 cups almond milk
1/2 tsp organic pure maple syrup

Chia pudding layer:
Half a cup of chia seeds
1 1/2 cups almond milk
1/2 tsp vanilla extract
1/2 tsp organic pure maple syrup

Ice cream layer:
1 banana, frozen
Handful blueberries
2 acai berry capsules, opened and emptied into the blender

Extras:
Almond butter
Quinoa pops
Mulberries

Method

The night before you want to eat this, make the overnight oats by mixing all the ingredients in a bowl, cover and leave in the fridge overnight. Do the same for the chia pudding.

In the morning, make the ice cream layer by putting the ice cream ingredients into a high speed blender to make ice cream.

Then just layer up all the ingredients and eat!

Ice cream for breakfast?? Who says you can’t be healthy and have fun! Smoothie bowls are one of my favourite breakfasts. You can literally put anything you want in or on them and you can pack them with vitamins and nutrients which is what I’ve done here. Once again, vitamins C & K and antioxidants are what I’m looking to increase right now as well as omega 3, as I approach the last few weeks of pregnancy, so I took this all into account by using blueberries (vitamins c and antioxidants), mulberries (vitamin k), acai berries (antioxidants) and flax seeds (omega 3), when making this simple, quick, delicious breakfast.

Ingredients

1 frozen banana
A large handful of frozen blueberries
2 dates
1 tbsp almond butter
2 acai berry capsules (sprinkled in)
A splash of almond milk

Toppings:
1 tbsp flax seeds
Handful organic dried white mulberries
Tbsp sunflower seeds
Handful fresh blueberries

Method

Simply put all the ingredients (except the toppings) into a high-speed blender and blend until a smooth, ice cream forms. The blueberries and banana being frozen will cause the blender to turn it to ice cream.

Spoon into a bowl and add the toppings.

Coconut & Cacao Ice Cream

Coconut Cacao Ice Cream

Yes it’s ice cream, but I had it for breakfast. Ice cream for breakfast?? When it’s healthy, why not? It’s simply bananas, raw cacao, coconut cream and a drop of maple. That’s it! Indulge why don’t you 🙂

Ingredients

2 frozen bananas (freeze the night before in slices
The creamy part from the top of a can of coconut milk (save the watery part for a curry or something)
1 tsp raw cacao powder
1 tsp organic maple syrup
Desiccated coconut

Method

Put all the ingredients into a high speed blender and blend until smooth. Top with the coconut and enjoy.

Banana Crunch Smoothie Bowl

Banana Smoothie Bowl

Breakfasts don’t need to be just cereal or toast! I love making up new smoothie ideas for a yummy, filling and nutritious breakfast. Check out our other smoothie bowls on our breakfast page.

Ingredients

1 and a half frozen bananas (slice and freeze the day before)
1 tbsp almond butter
2 medjool dates
Splash of almond milk
Tsp chia seeds
Homemade granola or organic store bought
Some puffed brown rice

Method

Put all the ingredients except the granola and puffed rice into the blender and blend until smooth.

Pour into a bowl and top with the granola and and puffed rice (or puffed quinoa) and enjoy!

Chocolate ‘Nice’ Cream & Overnight Oats Breakfast Parfait

Oh how I love a breakfast parfait. It’s so important to get your protein in in the morning, I’d say especially if you’re a veggie but it’s for anyone really. It’s the most important time of day to have a good protein intake so most of my breakfasts are packed with plant-based protein. I see some people doing nana ice cream parfaits in massive jars but for me it’s too much, this amount is just the right portion size for breakfast, I’d say. My protein today came from the almond butter in the oats, the almond milk in the oats (calcium also), the cacao in the ice cream, and the quinoa pops layered in the middle and sprinkled on the top. I also added maca powder to the overnight oats to give me extra strength and endurance.

Ingredients

Overnight oats layer
1 cup organic jumbo rolled oats
2 cups almond milk
1 tbsp almond butter
1 tsp maca powder
1 tsp organic natural maple

Chocolate nana ice cream layer
2 frozen bananas
1 heaped tsp raw cacao
1 tsp organic natural maple

Extras
Puffed quinoa pops

Method

The day before, combine all the ingredients for overnight oats, mix well, cover and leave in the fridge overnight.

When you’re ready to make the parfait, take the bananas out the freezer and put them in the blender with the cacao and maple and blend until smooth and creamy.

Layer a few spoonfuls of the overnight oats on the bottom, put the quinoa pops in the middle, then spoon the ice cream on the top and sprinkle with more quinoa pops.

You should have a big bowl of overnight oats left so you can have this for breakfast for the next few days in whichever variation you like…

Three Variations of Homemade Ice Cream

I kid you not, homemade ice cream is the easiest thing to make! You need to have a good, high-speed blender like the Vitamix, and some fruit. That’s literally it!

Freeze bananas the day before, then add them to the blender. The super high speed turns the frozen bananas into cream without actually putting any cream in there, that is how simple it is!

Variation 1:
Just frozen bananas, topped with Chunky Monkey Cookie Dough Chunks

Variation 2:
Frozen bananas with two dates to make a banana caramel ice cream, topped with Raw Cacao Cookie bites

Variation 3:
Simple sorbet – frozen strawberries and raspberries topped with some raspberries.

You can top with date syrup, nuts, seeds, fruit, desiccated coconut – anything you like. My parents came over for dinner tonight and couldn’t believe it was completely and totally plant-based and guilt-free!
