Apricot & Coconut Buckwheat Granola

I’m obsessed with granola and have been making yummy granola with oats for years (check out the recipe here) but I’ve never made it with Buckwheat before and I’m not sure why. It’s much lower GI and more easily digestible and despite having ‘wheat’ in its name, it’s not wheat at all, it is in fact a plant! I saw buckwheat groats in Planet Organic and decided to buy them and give this a go.

This turned out really delicious and you can really add anything you like to it.

Serve with chilled almond milk and it’s just divine!

Ingredients

300g buckwheat groats
50g coconut chips or desiccated coconut
50g sunflower seeds
50g pumpkin seeds
Pinch Himalayan salt
4 tbsp coconut oil
3 tsp ground cinnamon
2 tsp ground ginger
1 tsp ground nutmeg
4 tbsp maple
Good handful coconut chips or desiccated coconut
About 10 dried apricots cut into small pieces

Method

Preheat the oven to 180 degrees.

Melt the coconut oil in a saucepan. Put the buckwheat in a large bowl and pour over the melted coconut oil along with all the other ingredients except for the apricots and mix well.

Spread out evenly on a baking tray and bake for 10 minutes then stir it well, and bake for another 10 minutes.

Take it out the oven and mix in the dried apricot slices and leave to cool before putting it in a glass jar or plastic container. It will keep for a good while!

Serve with chilled almond milk.

Summer Berry Smoothie

This is basically the same as the summer berry smoothie bowl but this is more of a smoothie than an ice cream. It is our go-to breakfast most mornings, for me and Braxton, I just spoon-feed it to him. When there are no berries we just use banana and the other ingredients and it’s a great way of getting daily superfoods into us.

The Autumn is about to start so trying to get as many berries in while I can!

Ingredients

250ml almond milk (or oat, rice or coconut milk)
1 banana
Handful strawberries
Handful blueberries
1 banana
Handful redcurrants or any other summer berries you have
2 dates
1 tbsp almond butter
1 tsp acai berry powder
1 tsp maca powder
1 tsp chia seeds
1 tsp flax seeds
1 tsp hemp powder
2 ice cubes

Method

Blend all ingredients in the blender and pour into a cup – literally easier than making toast!

Blueberry Porridge Bars for Baby Led Weaning

Ok guys, I don’t have time to write a super long post today but been looking for things to give my baby that he can feed himself as we’ve started on solids and I’m trying to do as much baby led weaning as possible. So instead of porridge these are basically porridge, but baked! With organic blueberries for antioxidants, acai for extra super-duper anti-oxidants and chia seeds for extra protein.

Porridge Bars

Ingredients

320g organic jumbo oats
1 punnet of blueberries
250ml almond milk
1 tsp vanilla extract
100ml maple syrup
1 tbsp. chia seeds (optional)
1 tsp acai berry powder (optional)

Method

Preheat oven to 180c and grease a square silicone baking tray with coconut oil.

Add the oats, almond milk, vanilla and maple to the food processor until it’s all combined. Once combined add the blueberries, acai and chia seeds and pulse until the blueberries are evenly distributed but not all totally mushed (some of them can be mushed!)

Spoon it into the cake tin and bake for 10-12 minutes.

Wait until completely cool before you slice into bars.

These will last for a maximum of 4 days before they start growing other stuff!! Keep in an airtight container. I usually make mine on a Sunday and Wednesday is the last day I can use them.

Overnight Oats with Mulberries

Overnight Oats Mulberries

It’s Vitamin K central round my house! As you have probably gathered from my recent posts, I am upping my natural intake of vitamin K in the last eight weeks of pregnancy to prevent having to give my baby the injection after birth. Mulberries are the highest natural source of Vitamin K so I’m stocking up! And what better way to have mulberries than in their natural form, to sweeten up my overnight oats. This was a really delicious breakfast bowl, I’m stuffed! And so satisfied.

Ingredients

1 cup gluten free, organic, rolled oats
2 cups almond milk
1 tbsp almond butter
1 tsp maple syrup (optional)

Toppings:
Handful of dried white mulberries
1 banana, chopped
A sprinkle of desiccated coconut

Method

Simply put the ingredients (excluding the toppings) in a bowl, mix well, cover, and leave in the fridge overnight. You don’t need to add the maple syrup, just depends how sweet you like it.

When you’re ready to eat it, add the toppings. Simples!

Peanut Butter Oats, Acai Chia Pudding & Puffed Rice Breakfast Parfait

I love a breakfast parfait, as you probably already know. This was a pre-workout breakfast and really kept me going until lunch, it is just packed with energy.

Ingredients

Acai Chia Pudding:
Quarter cup chia seeds
1 and quarter cup almond milk
2 tbsp pure organic maple syrup
2 acai berry capsules opened and sprinkled in

Peanut Butter Maca Overnight Oats:
1 cup organic gluten free oats
2 cups almond milk (add more if needed)
1 tsp maca powder
1 tbsp peanut butter
1 tbsp maple syrup

Handful puffed brown rice
1 banana

Method

The night before you want to eat this for breakfast, make both the chia pudding and overnight oats (separately), cover with cling-film and put them in the fridge. Do gauge whether either of them need more almond milk and add if they do.

The next morning simply layer them up and finish it off with sliced banana and the breakfast rice puffs.

Overnight Oats with Strawberry Compote

Overnight oats is this easiest thing to make and it makes such a nice change from the usual breakfast. You can also do all sorts of flavours and toppings so it never gets boring. Get a good batch of organic, gluten free oats, some almond milk, and some fruit and nuts and you’re ready to go! The chia seeds give extra goodness and protein.

Ingredients

1 cup organic, gluten free oats
1.5 cups almond milk
2 tbsp pure organic maple syrup
1 tsp cinnamon (optional)
1 tbsp chia seeds
A big handful of organic strawberries

Method

Mix your oats, milk, maple, chia seeds and cinnamon in a bowl, cover with cling-film and leave in the fridge overnight.

When you’re ready to eat it the next morning, make the compote by putting the strawberries in the food processor.

Layer both mixtures up in small cups or bowls, top with nuts or seeds of choice. Yummy and so great for the kids!
